Afternoon Tea Masterclass - £65
Impress your friends with the perfect afternoon tea after spending the day with our Tutor Jeff Purves. Throughout the course each student will learn how to bake a victoria sponge, plain scones, dropped scottish pancakes, chocolate tartlets with a hint of salted peanut butter, shortbread, individual rhubarb pies and finally smoked salmon sandwiches. You will then get the chance to relax and sample the afternoon tea we prepare for you along with Jeff's freshly made cakes in the beautiful surroundings of the house of Glenmuick. Each student will leave with all the food they have prepared. All ingredients and equipment will be provided.

Americana Baking - £65
Join The Style Academy founder Andrew Mellon for a fun filled afternoon baking lots of our favourite American baked goods. Through the course of the afternoon Andrew will talk you through the recipes and techniques required to produce a Red Velvet Cake, Angel Food Cake, Lemon Bars and Chocolate Brownies. He will also introduce you to the cup cake phenomenon, where you will look at and of course sample different icing and frostings. Whether you're a complete beginner or an experienced baker this hands on course is sure to be a great afternoon packed with hints and tips for you to take away along with all the cakes you prepare on the day.

Appliqué - £90
Use the pretty and effective craft technique of appliqué to create a small wall-hanging. The simple design can be hand or machine-stitched and will be ready to take home at the end of this day-long class. Working with 100% cotton, all materials will be provided and there will be a choice of embellishments, such as beading, sequins and crystals, to make your creation unique and special. Isobel's workshop is suitable for beginners but can be made more challenging for those already advanced in this skill. Having crafted all her life, Isobel has devoted herself to crafting since retirement and now practices patchwork and quilting as well as appliqué. Keen to encourage others to take up crafting, she has taught all over Scotland and officiates as a judge at regional agricultural shows as well as entering competitions herself. Isobel is also teaching a Patchwork class at The Style Academy Glenmuick.

Argentinean Asado Grilling - £75
Lean the South American way of grilling and the different cuts of meat along with classic accompaniments such as chimichurri along with grilled vegetables. We will of course be making empanadas. The course is lead by Andrew Mellon who spent a week in Buenos Aries taking private Asado lessons to learn from the experts. You get to take home salad dressing, chimichurri and a few surprises . The Asado is enjoyed by all the students that day at lunch.

Artisan Bread Making - £75
Join us in the warmth of the fabulous Style Academy kitchen to learn the art of bread making. During this hands on course students will be taught the skills and techniques required to create a sour dough, granary rolls, black olive and Parmesan cheese, focaccia and also a soda bread, under the expert tuition of instructor Jeff Purves, formerly of local restaurant the Green Inn. Courses will be run in small groups to ensure you receive your instructor's full attention so you can get the most from your course. At the end of the course you will take home all the breads you have baked.

Ballroom Dancing - £195 per couple, full day, £110 per couple, half day (morning)
Join the Fly Right Dance Company for a weekend of intensive social dance workshops, designed to bring out your inner Fred and Ginger! Classes will run all day Saturday and on Sunday morning, and the course will be tailored to the needs of the group, with dance styles being drawn from a pool of dances, such as the Social Foxtrot, Quickstep, Waltz, Charleston and Swing/Jive. The whole weekend will culminate in an original tea dance, as would have taken place in a country house such as Glenmuick. Your instructors, Gary and Susan - principal dancers with the Fly Right Dance Company and dance hosts of 3 world record tea dances - place the emphasis on fun and accessibility. Let the fly Right Dance Company take you on a journey back to a time of elegance and style to re-discover the joy of dancing to the revived less formal, original and more accessible ballroom dances of the 1900's to 1920's. Basket Weave Course - £80 - Full Day
Here you will learn how to make your own small round fruit /bread basket using the traditional basket making technique, whether you're a complete beginner or have had some previous experience this course is suitable for you. In the usual Style Academy way this class will run with 4-6 students so you can ensure you will have your instructor's full attention at all times. Lunch will be provided so you will have a chance to sample the delights from the kitchen and relax in the house and its beautiful surroundings, before its back to work on your basket which you will take home at the end of the day.

Basket Weave Course - Wreath - £50 - Half Day
Here you will learn how to make your own wreath made by winding jute around a base of willow. Your finished wreath will be 100 % natural and bio degradable. We will show you how to use different foliage depending on the time of year to create a number of different looks and use what is in season. Whether you're a complete beginner or have had some previous experience this course is suitable for you. In the usual Style Academy way this class will run with 4-6 students so you can ensure you will have your instructors full attention at all times.

Brewing Masterclass - £195
This exciting new full day course offers you the chance to create your very own unique beer. You will discuss what you wish to make and learn all the qualities each ingredient offers. Once you have chosen your recipe you will record these details so you will be able to recreate it in your own time. You will then be taken through the brewing process, step by step from creating the mash, fermenting and packaging your beer. All techniques will be discussed and explained fully as this hands on course will be completed in small groups to ensure you have the instructor's full attention. You will take home on the day your recipe and full details of the brewing process which will enable you to brew at home. Four weeks after the course you will receive a case of 12 x 500ml bottles of your own beer. All ingredients, equipment and packaging supplied.

Cairngorm Impressions - Landscape Painting - £175
Join us for our new one day landscape painting course which will encourage students to look at landscape with reference to the works of the French Impressionists. After looking at and discussing the work of the French Impressionists you will begin your own piece. Using Acrylic Paint on your choice of paper, board, or Canvas your course instructor Allan Lawson will show you the skills and techniques required to produce your final piece of artwork. This course is primarily aimed at beginners or those with some experience. Artisan Cheese maker Nicky from The Devenick Diary on Royal Deeside will guide you through the art of cheese making with this hands on workshop to make a soft cheese, homemade butter and a blue cheese to mature at home. Enjoy an introduction to chocolate and detail about the classes to be held at Glenmuick. This will be jointly hosted by Albert Close, famed for his work at three 5 star establishments, a chocolate specialist with a passion for patisserie and Young Chocolatier of the Year 2012, Craig McKenzie. Craig will then give an introduction to couverture in dessert making and a demonstration work shop on salt caramel tart, grandmariniere cream and how to present for restaurant service. Chocolate Tasting - £35
A trained guide from the
Highland Chocolatier will lead you through the world of chocolate, broadening your understanding of its history, production and development, with some necessary sampling along the way! Warm to the theme with a cup of Hot Chocolate Velvet Truffle Ganache before enjoying a discussion on what "chocolates" we are familiar with eating, the difference between blended, compound and single-origin cocoas, and the tasting of four single-origin cocoas from plantations around the world. Learning the art of chocolate tasting and the vocabulary used to describe chocolate flavours, you will discover which chocolate suits your palate and why. Sample the award-winning Cocoa-Dusted Velvet Truffle, before indulging in a Chocolate Afternoon Tea to satisfy any chocolate aficionado, comprising of scones, torte, velvet truffles and spiced pralines.

During this half day course Highland chocolatier Iain Burnett will share with you his background, expertise and passion of chocolate. Iain will offer a chocolate tasting of several single origins finishing with his unique award winning Cocoa Dusted Velvet Truffle. You will then enjoy a demonstration of some decorative pieces of his chocolate artistry. Of course you will have the opportunity to learn techniques and ask him questions along the way. Introduction to Chocolate Flavour Combinations - £85
This half day course with top chocolatier Albert Close fames for his work in top 5* establishments will teach participants about chocolate and the art of flavour combinations with chocolate. Taste chocolate from around the world travelling on a tasting trail from Venezuela to Mexico and Madagascar. Discover the flavour combinations to complement this range of chocolate. With your new found knowledge you will make your own chocolate bar and combine with your choice of flavours such as chilli, nuts and sea salt.

Introduction to Chocolate Praline Making - £145
This full day course hosted by top chocolatier Albert Close, famed for his work in top 5* establishments will demonstrate how to make whisky caramels, passion fruit pralines and hand dipped garden mint truffles. Participants will gain an in-depth knowledge of chocolate along the way before making their own pralines resulting in 20-25 of each to take home at the end of the day. Chocolate Box and Hand Piping/Modelling Course - £145
This full day course follows on nicely from our Introduction to chocolate praline making the previous day. Top chocolatier Albert Close will show participants how to make a chocolate box designed to carry truffles, finished in hand-piped chocolate butterflies and hand modelled chocolate roses. This will be a unique insight into more advanced chocolate techniques to produce a small show piece ideal for a gift or dinner party table decoration.

Introduction to Chocolate - £75
Join Junior Chocolatier of the year 2012 Craig McKenzie in this half day course. Craig will give an introduction to chocolate and demonstrate the art of making Suisse rocheres and chocolate mendicants. Then it will be hands on with the chocolate to produce your own, culminating in 20 of each to box and take away at the end of the class. Craig is currently training for the Scottish Culinary Championships to be held in March and has just been awarded a Craft Scholarship by HIT Scotland.

Evening Wildlife Walk/Talk - £20 - 6.00pm - 7.00pm
n introductory tour with Deeside Nature Activities will give you a flavour of the wildlife and scenery of the highlands within the 14000 acre Glenmuick estate..
Possible sightings will include Red and Roe Deer, Red and Black Grouse, Osprey, Golden Eagle, Buzzard, Kestrel, Lapwing, Oystercatcher, Dipper, Wheatear and Grey Wagtail . These are all species that are more than likely to be seen during a 1 ½ hour introduction to the sights of Deeside together with a topical commentary on the day to day conservational issues relating to highland estate management.

Felt Making - £60
Join us at the stunning House of Glenmuick to learn the traditional technique of wet felting to create beautiful pieces of material. Your tutor Jo Riley will guide you through the techniques to create your piece then show you the skills required to personalise it with your own colours and textures. Enjoy experimenting with the various effects that can be achieved. This traditional craft is very therapeutic but be prepared for some messy fun. You could then join us for a further course to turn your felt into a book cover, iPad case, Cushion or Hot Water Bottle Cover.

Food gathered from the wild has a long history in the everyday life of country folk right across the world. Indeed, many of our forebears collected wild greens as they returned from work in the fields each evening, while other species were semi-domesticated for use. Even the Carolingian kings were eating plants that in the 21st century we now consider edible 'wild' plants.
For modern palates, seasonally collected edible wild greens offer exciting new texture and taste combinations to be explored, and on this course you will not only learn about plant identification, and foraging safely and sustainably, but also wild food preparation ideas that you can try your hand at in the afternoon. Your course tutor Marcus runs the Wild Food School and regularly gives talks at the Eden Project and occasionally at the Natural History Museum.

Flower Arranging - £95
Join Florist Katherine Elliot on this fun course to discover the art of flower arranging. During this workshop you will make a hand tied bouquet from the selection of flowers supplied. Katherine will guide you using all the tools and techniques required to produce a product which would cost you around £50-£60 to buy in a shop. Katherine will then demonstrate a large vase display so you can learn all the hints and tips for gorgeous displays in your own home. All Students will take home their bouquets prepared on the course. Game Preparation - £145
We are delighted to offer you the chance to join our master butchers from Sheridan's in Ballater in this three hour hands on demonstration in game preparation. During this course the butcher will talk you through the skills required to debone a haunch of venison, the meat will then be turned into a roasting joint and you will also prepare your own sausages which you will take home with you. The fillet will be prepared and cooked by the butchers who will talk you through this. You will then Relax and enjoy a three course lunch in the fabulous surroundings of the House of Glenmuick which will include the fillet of venison and some specially selected wines.

You will also investigate alternatives such newspaper or brown paper, which with the right accessories can look so chic and stunning. Find out what can and cannot be recycled and which little odds and ends can be used to good effect. Ever wondered why a bow does not lie straight and flat? Daphne has the answer. Join Pip Will from Ballater's Lark's Gallery for a masterclass in how to make beautiful glass beads using a portable glass lamp. Following Pip's demonstration in creating these unique handmade lamp beads, you will then have the opportunity to construct stunning jewellery pieces yourself, using the beads, sterling silver wire and other components. Hand-blocked Wallpaper-making - £375 (2 Day Course)
You will start the day by exploring the gardens to find specimens to sketch and incorporate into your wallpaper design. Time will be spent looking at classic patterns and discussing what makes them successful. With guidance from Jo, students' free-hand plant drawings will be worked up in repeat and transferred in reverse onto a lino block, which will be cut and printed. This course is all about the variety of possibilities that emerge as students develop individually as the weekend progresses.

Interior Design - £225 (1 Day Course)
Edinburgh based Interior Design firm Ian Smith Design have developed a substantial portfolio of traditional and modern designs from Georgian houses to modern apartments. Notably, they have designed two Edinburgh based restaurants for Michelin Star restaurateur, Martin Wishart. They also gained widespread recognition in designing Edinburgh's latest luxury hotel, The Atholl which opened in May 2011.
Participants will be able to gain practical experience together with intimate tuition and guidance from Ian Smith and his co-director Stuart. Guests will see several of the companies projects and learn the decoration principles employed. Participants will then be divided into small groups to create their own design ideas for one of the bedrooms at Glenmuick before being presented with an exclusive design for the room by Ian with drawings and mood boards. This full day course also gives participants the chance to draw on the knowledge of the tutors with their own interior design questions.

Lampshade Making - £75
Join us at the Style Academy where we will show you how to hand roll various sizes of lampshades from small 6" shades to very large 16" shades for maximum impact. We will supply a varied selection of plain and patterned fabric for you to choose from, however if you have a fabric in mind for your creation please bring this along with you. Also If you have taken part in our screen printing course this will be an excellent way to use your own fabric design. Do not fret about being a beginner as we will be on hand to assist you throughout the process. At the end of the course you take away your creation and give it pride of place in your home.

Letterpress - £85
Join Piccolo Press founder Tim Honnor for this rarely available course where you can produce unique stationery with your personal stamp on every piece. The course is ideal for anyone wanting to produce their own set of party invitations, wedding invitations or other personal hand produced items. This traditional method of relief printing involves locking movable type into the bed of a press, inking the type and then rolling or pressing paper against it to form an impression. Invented by Johannes Gutenberg in the 1400s, it was the standard form of printing text until the 19th century and remained in wide use in publishing up until the 1960s. Mixology - £65
Courtesy of the best cocktail bar in Scotland (SLTN awards, Nov 2012) this class will encompass a full history of cocktails from the first written record of the word cocktail and the history behind drinks such as the Old Fashioned. You will be taken on a drinks journey through the ages up to the modern day twisted cocktails such as the bramble or cosmo. Each participant will be able to sample some of the finest mixed drinks whilst learning the techniques to be able to create cocktails in the home and become a bartender. Paint Finishing and Upholstering a Simple Chair - £195.00 (2 Day Course)
This 2 day class will re-vitalise an old dining room chair, you may bring your own if you have one but if not we are happy to supply one at no
additional cost. Day one will be spent stripping off the upholstered pad and preparing the chair frame before painting it.
Day two will be spent re-upholstering the seat. We have a lovely selection of Johnston's of Elgin tweed for you to choose from for your chair,
cost of fabric included in course fee. As part of this course there will also be a demonstration on how to upholster a different type of chair.

Painting on the iPad - £145
We are delighted to be offering you this exciting new course with artist Hugh Dunford Wood. The course will explore line drawing, watercolour techniques, pastel and crayon, tonal washes, impasto and colour saturation. Students will work with layers and many of the iPad apps' features to produce a still life or landscape that can be emailed to friends and family. Hugh is determined that those who already paint will find that their skills are transferable to an iPad, and that beginners with an interest in creating artwork will benefit too. For him the use of electronic media to create art is a logical step of progression, and one that has already been taken by other artistic forms.

Join well known Scottish artist Howard Butterworth for this one day landscape painting course. Offering a unique insight into his experience of painting en plein air, technique and career as an artist, offering

Paper Making
Learn how to create some rustic handmade paper in this fun new course at the Style Academy. Use some interesting ingredients which will help you create different effects. Your instructor Jo Riley will show you the techniques required to make this lovely paper and will also teach the skills required to make some silk paper. You will leave the course with a collection of beautiful papers which can be used in many ways to be discussed during your course. Please note that as the paper requires some drying time we will send your finished pieces onto you a few days after the course.

Working with a selection of cotton fabrics, spend the day creating a beautiful patchwork cushion. Under the expert tuition of veteran crafter
Isobel Eckersley, learn the basics of the log-cabin design technique and create a lovely gift for your home or that of a friend. Using hand or machine stitching, the workshop is suitable for beginners but can be tailored to those with more experience. All materials and embellishments are provided and pads too, if required. Having crafted all her life, Isobel has devoted herself to crafting since retirement and now practices appliqué and quilting as well as patchwork. Keen to encourage others to take up crafting, she has taught all over Scotland and officiates as a judge at regional agricultural shows as well as entering competitions herself. Isobel is also teaching an Appliqué class at The Style Academy Glenmuick.

We are delighted to be offering this new practical, hands-on course that will look at the use of natural light and location to create some stunning portrait photographs in and around The House of Glenmuick. Award winning Professional photographer Tina Luke will guide you through the course. With the emphasis on creativity the course will cover positioning, posing, location and lighting, without getting too technical! There will be an element of post-production and is aimed at anyone with a camera whether it be an SLR, compact or iphone!

Come and join us at the Style Academy for a half day in this real treat of a course for fish lovers. After discussing the quality and options with tutor Jeff Purves you will select your range of fresh fish when the van visits the house of Glenmuick on the morning of your course. You'll discover the basics in filleting and fish preparation, a variety of cooking methods, and some choice combinations of flavours and accompaniments. You will then Relax enjoy your lunch along with a glass of wine in the Stunning surroundings of the Style Academy. Students will take home some infused oils with fresh herbs and the suitable dishes prepared during your course.

Using Oil Pastel on paper, your tutor Allan Lawson will teach you all the skills and techniques required to create your own beautiful piece of art. Allan will deliver a very informative and productive course in his usual inimitable and skillful manner which has made him such a sought after tutor. Oil pastel is a medium which is ideally suited to expressive work stimulated by landscape and which the beginner will find produces very satisfactory outcomes.

Join us at The Style Academy in front of a roaring fire with our local storyteller Joan Anderson. During this hour long event Joan will guide you through a selection of Victorian stories related to nearby Balmoral Castle or Stories from in and around Glenmuick. Many of Joan's stories are family tales passed down by local people, and all sources are identified and acknowledged in a list which is available at every event. Some of the legends are improbable, but they are part of the richness of local lore, which is sometimes the only explanation for heritage we are just beginning to appreciate.

Sushi Demonstration and Sake Tasting - £35
Introducing the flavours of Japanese cooking: Tempura -it's not just sushi! Japanese cuisine is one of the most varied and healthy cuisines in the world. Find out how to bring the flavours and techniques together with a real Japanese chef. We'll concentrate on a presentation centred on tempura - the delicate art of deep frying of seafood, fish and vegetables. Kumiko will show you how to prepare everything, including how to create dipping sauces and how to choose, prepare and serve Japanese noodles with your tempura.

Sushi For Beginners Part 1 - £95
In this half-day course let Kumiko show you how the freshest ingredients and simple techniques come together to make one of the worlds most attractive foods. It looks great but it's easier than you think to make sushi. She'll show you how to combine tuna, prawns and Scottish salmon with sushi rice to make gripped sushi - nigiri sushi. You'll learn how to make sushi rice and prepare and cut fish. Kumiko has honed her teaching techniques over many years so that it's a fun and tasty, experience.

Sushi For Beginners Part 2 - £95
IKumiko has been showing beginners how to make sushi for over ten years. In this half-day class we build on making sushi rice and preparing fish by making different kinds of rolls: maki rolls (with seaweed) with different kinds of fish and vegetables, big fat greedy rolls and inside-out rolls . Learn how the different tastes of Japan can be combined into a beautiful presentation. We'll use the freshest fish, sourced locally when we can. Scottish salmon makes for great tasting sushi.

Tea Tasting - A Taste of Tea - £30
Join us for a great afternoon of tasting some amazing teas, with our in house team, who have just completed training at The Jenier World of Teas Academy in Glasgow. This tasting will guide you through the history of tea, the processes involved and the many myths. You will get to taste 6 plus teas, discovering the brewing process, serving suggestions and lots of tasting.

Textile Screen Printing - £135
Enjoy a full day with us learning the skills of screen printing. This includes cutting your stencils and building layers of colour and shape for you to create your own design to print on a choice of paper or fabric. There may also be the option of experimenting with some small wood slabs. We will teach you the printing process so that you have the confidence to continue printing at home - from choosing inks to mixing your own colours and buying the right equipment we will do our best to guide you along the way. We would advise you to have an idea of the artwork you want to create on the day by bringing your own sketches, pictures or fabric that inspires you. However we will supply all equipment and fabric necessary to complete your design which you will be able to take home.

The Whisky Tutor Gordon Muir invites you to cosy down in the House of Glenmuick’s elegant Dining Room for an evening spent unravelling the mysteries of Scotland’s favourite drams. Gordon specialises in “unpacking the smells” and teaches people the language of whisky so that they might understand it better. In small intimate groups you will receive an introduction to the basics: the barley, the smoke, the casks, and how to identify fruitiness. Sitting in front of eight select malts (Glenlivet 12, Lochnagar 12, Cragganmore 12, Dalwhinnie 15, Macallan 10, Mortlach 16, Talisker 10 and Lagavullin 16), you will be taken through how each whisky is made and relate that to its smells, going back and forward using the similarities and differences to help you discover them (even smell is relative!) before covering the different tastes and textures too.

Decipher labels and fine tune your tasting technique whilst tasting 6 wines. How does Cabernet Sauvignon differ from Merlot, how do they complement each other when blended? This 2 hour session will answer those questions and many more. A Wine Weekend - £375
We are delighted to be offering you this special chance to spend a full weekend with us at The Style Academy on our Wine Weekend Course. On your arrival enjoy a sparkling wine welcome followed by dinner with wine expert Carol Brown who will introduce you to sparkling wines around the world with a blind tasting of 4 different sparkling wines. The following morning Carol will guide you through a fun and knowledgeable course introducing wines from around the world. Tasting 4 White Grapes, 4 Red Grapes and 4 other great Grapes. This course is suitable for beginners and those with knowledge of some areas who would like to discover new wines and styles. There will be a broad cross section from both old and new world regions. Other subjects covered during the day will include tasting technique, storage and service of wine, theory of food and wine matching.
